Does Jan Vennegoor of Hesselink's (the Celtic footballer) name indicate that he is a member of the nobility?

He's not of nobility, just of two lines that were dying out. So his grandparents decided to hyphenate the names. There were never that many Dutch nobles, so the odds are never high that you'll find nobles in a Dutch tree. In this case, he descends from generations of farmers.
